The cuisine of the island of Hvar came out of decades of exploring tastes of different cultures and combining them with aromatic spices growing wild on the island. It proved satisfactory even to the most demanding gourmets.
Every tavern and every restaurant on the island have a rich variety of fish made according to traditional indigenous recipes: grilled quality fish with homemade olive oil, grouper brodetto, well-known gregada of Hvar, octopus baked under a baking lid, cuttlefish risotto, salads made of spider crab, lobster or scampi with capers and olives.
Homemade goat’s and sheep-milk cheese preserved in oil, delicious spit-roasted kid meat, Dalmatian “pašticada” (Dalmatian beef specialty), artichoke boiled with broad beans and peas; all these served with Mediterranean spices are only the beginning of a long list of specialties of the island. A variety of boiled vegetables grown in an unpolluted environment is a synonym for a healthy high quality meal of the island of Hvar.
To gourmands the island offers sweets with a taste of local tradition – almond and carob cake, “cviti” and “pašurate” – traditional delicacies, sugared almonds and the best taste of the town of Stari Grad – gingerbread of Stari Grad. On the basis of its authenticity gingerbread of Stari Grad is proclaimed an Intangible Cultural Heritage by Croatian Ministry of Culture.
